Main Ingredients:
- 1 lb flank steak, thinly sliced against the grain
- 1/4 cup cornstarch
- 8 oz egg noodles or lo mein noodles
- 2 tbsp vegetable oil (divided)
- 3 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 small onion, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 2 carrots, cut into matchsticks
- 1/4 cup sliced green onions
For the Teriyaki Sauce:
- 1/2 cup low-sodium soy sauce
- 1/2 cup mirin (sweet rice wine)
- 1/4 cup brown sugar
- 2 tsp sesame oil
- 1 tbsp cornstarch mixed with 1 tbsp water
Instructions
- Prepare the Beef and Noodles:
- Toss the sliced beef in a bowl with ¼ cup cornstarch until evenly coated. Set aside.
- Cook the noodles according to package instructions. Drain and set aside.
- Stir-Fry the Beef:
- Heat 1 tbsp vegetable oil in a large skillet or wok over high heat.
- Working in batches, stir-fry the beef for 2–3 minutes until browned. Remove and set aside.
- Cook the Vegetables:
- Add the remaining 1 tbsp oil to the pan. Stir-fry the garlic and ginger for 30 seconds until fragrant.
- Add the onion, red bell pepper, broccoli, and carrots. Stir-fry for 3–4 minutes until crisp-tender.
- Make the Sauce:
- In a bowl, whisk together the soy sauce, mirin, brown sugar, sesame oil, and cornstarch slurry.
- Pour the sauce into the pan and bring to a simmer. Cook for 2–3 minutes until thickened.
- Combine:
- Return the beef and noodles to the pan. Toss everything together until well coated in the teriyaki sauce.
- Serve:
