Instructions
- Prepare the Cupcakes:
- Preheat the oven to 350°F (175°C). Line a cupcake tin with cupcake liners.
- In a large mixing bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- In a separate bowl, whisk the wet ingredients: eggs, coconut milk, vegetable oil, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
- Divide the batter evenly among the cupcake liners. Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
- Make the Frosting:
- Beat cream cheese and butter in a large bowl until smooth. Gradually add powdered sugar and cocoa powder, beating until fluffy. Stir in vanilla and melted chocolate to taste.
- Assemble the Nests:
- Transfer the frosting to a piping bag fitted with a small round tip. Pipe circular rings of frosting onto each cupcake, creating “nests.” Ensure the edges are slightly higher to hold the eggs.
- Decorate:
- Place 2–3 Cadbury mini eggs or jelly beans into each frosting nest.
- Serve and Enjoy:
- Serve immediately or store in an airtight container in the refrigerator until ready to enjoy.
