1 can (15 oz) white beans, drained and rinsed

1 whole head garlic

1 tablespoon olive oil, plus more for roasting

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

2 tablespoons lemon juice

2 tablespoons tahini (optional)

Salt and pepper, to taste

Water, as needed for consistency

Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and caramelized.

Squeeze the roasted garlic cloves out of the skins into a food processor.

Add the white beans, olive oil, rosemary, lemon juice, tahini (if using), salt, and pepper. Blend until smooth, adding water as needed to reach desired consistency.
